Capitoline is made by hand in small batches, aromatized with a series of select botanicals with which we intend to create a balanced and unique drinking experience. Unlike most commercial vermouth production, our base wines are carefully selected as a critical part of Capitoline’s foundation. Vermouth simply is aromatized, fortified wine. A beverage spanning centuries with roots as far back as Ancient China and the Persian Empire, vermouth has seen endless iterations, usages, and styles. We in the US once drank enormous amounts of vermouth, but were derailed by Prohibition and WWII. Thankfully a handful of American artisans are working towards wider production and consumption today. Peter and Kat began their self taught vermouth journey together in restaurants in Washington, DC by experimenting, tinkering, and drinking.
